Goat Cheese from Trás-os-Montes DOP
The following cheese is made from raw Serrana goat milk.
After milking the ewes, the milk is filtered and heated to 35ºC. Then add the rennet of animal origin and let it rest. After coagulation, the mass is placed in the molds, where the curd is exhausted and, consequently, the whey is removed.
